We’re 6 weeks into 2018 and to be honest, I’m having an absolute shocker of a year so far. I haven’t blogged in over a year properly so I’ve set myself the task of one post a week to keep myself accountable with fitness, life and general updates; the whole reason I started Little Blog of GL in the first place, three years ago!
After nearly 23 years, I’ve finally been able to say ‘I CAN COOK!’. It’s not that I never liked cooking before, at uni my flatmate and I always loved being experimental with recipes; they just never worked! Haha!
Somehow, with the help of Deliciously Ella’s cookbook, I have changed my ways and so far, it’s been quite successful (only two that haven’t quite worked out right). So the past few weeks I’ve been cooking up some absolute treats, some healthy, some more sweet treats, but all made from scratch. I’ve absolutely loved it!
Where I’ve been exercising so much recently, I haven’t been too worried about eating pasta of a lunch or dinner but my leg injury flared up on Friday again, so, I’ve admitted defeat and I’m taking it a bit easier this week.
With this in mind, I wanted to make something a little lighter for dinners. Soup!
The last week I’ve been getting creative in the kitchen and mixing up some new recipes – mainly from Deliciously Ella’s book.
This is the fourth recipe I’ve now made from the book and they never fail! I’ve mentioned before I’m not the world’s best cook so it’s a huge achievement that I’ve managed to make this many without making any one ill ha!
After the pesto success at the weekend, I got onto the next recipe and decided to make Deliciously Ella’s Winter Warming Curry.
I’m terrible when it comes to recipes that if they take a long time to make, I just give up on the idea. So, for once, I made the curry the night before ready to eat the next day. The whole dish takes about 2 hours to make just as the recipe says and it’s so easy to put together.
So I have very much learnt my lesson after the weekend that if I don’t buy treat food, I won’t eat it.
I stupidly went to a local farm shop at the weekend full of yummy cakes, sweets, bread and yoghurt covered goodies! I left with some cake (justified for a family birthday) and some shortbread. I demolished the shortbread and soon regretted it!
I’m having one of those weeks where my motivation is at it’s lowest and I’m trying everything to keep going.
