This time last year, I knew nothing about nutrition. I would go through phases of eating salads, low fat foods and mainly all shop bought packaged food. I’ve calorie counted in phases too, only to get too obsessed with it and stop again. After buying three cookbooks and Kayla Itsines’ HELP guide since January, I have started to finally understand more and more about what I should be eating.

Last week I wrote a blog post about Madeleine Shaw’s book arriving, and setting myself a six week challenge to cut out sugar (blog post here).
I’m now moving into week 2 and I have some improvements to make! I had a great start to the week, but as usual, the weekend arrived and this is always my downfall.
After nearly 23 years, I’ve finally been able to say ‘I CAN COOK!’. It’s not that I never liked cooking before, at uni my flatmate and I always loved being experimental with recipes; they just never worked! Haha!
Somehow, with the help of Deliciously Ella’s cookbook, I have changed my ways and so far, it’s been quite successful (only two that haven’t quite worked out right). So the past few weeks I’ve been cooking up some absolute treats, some healthy, some more sweet treats, but all made from scratch. I’ve absolutely loved it!
Where I’ve been exercising so much recently, I haven’t been too worried about eating pasta of a lunch or dinner but my leg injury flared up on Friday again, so, I’ve admitted defeat and I’m taking it a bit easier this week.
With this in mind, I wanted to make something a little lighter for dinners. Soup!
The last week I’ve been getting creative in the kitchen and mixing up some new recipes – mainly from Deliciously Ella’s book.
This is the fourth recipe I’ve now made from the book and they never fail! I’ve mentioned before I’m not the world’s best cook so it’s a huge achievement that I’ve managed to make this many without making any one ill ha!
