Over the last few months, I’ve really found my love for eating fish again. It’s such a quick and simple meal and can be cooked in so many different ways.
My meal of the month for November (I know, I know I’m late!!) is white with a butter and garlic sauce, on a bed of mixed beans and vegetables. Super simple and full of taste!
Heat a frying pan with a knob of unsalted butter, finely chopped chilli and a chopped garlic clove until it melts. On a very low heat, place the white fish fillets skin side down in the pan and leave to cook through and crispy on the bottom (especially seabass). You will need to move the fillets around the pan every few minutes to ensure it doesn’t stick to the pan.
Whilst the fish is cooking mix up some beans of choice – I tend to use a mix of butter beans and cannelini beans. Squeeze half a lemon over the beans and carefully mix together. Serve altogether with your favourite green vegetables, pouring over the leftover garlic butter ready to eat!
