Last week I wrote a blog post about Madeleine Shaw’s book arriving, and setting myself a six week challenge to cut out sugar (blog post here).
I’m now moving into week 2 and I have some improvements to make! I had a great start to the week, but as usual, the weekend arrived and this is always my downfall.
I made it to Saturday afternoon before carelessly enjoying an ice cream in the sun…and Sunday, isn’t even worth talking about. Terrible!
However, I spent the rest of the week before this creating unbelievably delicious recipes from Madeleine’s book. Rewinding back to the end of 2014 – I could barely cook a piece of chicken without someone fearing the worst. Six months later, three new cookery books and a new outlook on my diet – I love trying new recipes and cooking; and thankfully, my family and boyfriend are enjoying it too!
As I was cooking most meals for one (or so I thought) this week, I made a few of them to eat for lunch the following day too so that I was always prepared.
Over the week, I made Turkey Meatballs, Cauliflower Base Pizza, Beef Stir Fry, Granola, Orange Duck, Orange Chicken and some Deliciously Ella Chia Seed Cookies and Pesto. I don’t think I’ve ever had such an exciting week because of food, it was all incredible. My personal favourite was the beef stir fry! I found a lot of the portions were smaller than expected but so filling.
I’m really proud of the way I ate from scratch for the majority of the week and I am annoyed about the weekend but I can learn from this and pick it up this week. My fall downs are at the weekend when I’m out and about, I find it really hard to avoid foods that I shouldn’t be eating and I get tempted by foods I wouldn’t eat if I was at home. I also didn’t think about drinks – I drank a Pepsi Max before realising I shouldn’t have, along with chewing gum without thinking for a second about that having sugar in it. There are so many things I need to become aware of but the first week has opened my eyes and was a good start. (Hangover’s also don’t help my willpower)!!
My aim over the next few weeks is to include more iron rich foods within my diet (eg. Beef), I’ve been feeling very tired and weak the past few weeks so I’ll be working on improving that too.
I would highly recommend Madeleine Shaw’s book to any one that enjoys cooking. The recipes are so yummy and easy to make and they don’t feel like a ‘diet’.
